I don’t know about where you are, but over here it’s passion fruit season, and as a result, I’ve been putting these delicious orbs of tropical bliss through their paces. For my efforts, I have perfected my own favourite Mango and Passion Smoothie, and tested it out in a number of experimental food things with varying levels of success. However, as predictable as the political leanings of a seedy politician, it was only a matter of time before I started corrupting this beautiful fruit with alcohol. So, after ‘testing’ a variety of combinations and methods, I now bring you what I believe is the perfect Fresh Passion Fruit Daiquiri.

Fresh Passion Fruit Daiquiri
Equipment
- 1 Spoon
Ingredients
- 45g (1½oz) Fresh Passion Fruit Pulp (Don't worry about the seeds for now)
- 60ml (2oz) White Rum
- 10ml (Half a Lime) Fresh Lime Juice
- 25ml (1oz) Simple Sugar Syrup
- 30g (3) Ice Cubes (to shake)
Instructions
- Cut the Passion Fruit(s) in half, and scoop the insides into a cocktail shaker with a spoon, aiming for the 45g mark. Don't worry about the seeds, we'll separate those when we strain everything into the glass
- Add 60ml of White Rum, 10ml of Fresh Lime Juice and 25ml Simple Sugar Syrup followed by around 3 ice cubes
- Secure the lid and give everything a vigorous shake until the ice has completely melted
- Take a martini glass to the location where you intend to enjoy your drink, then strain the contents of the cocktail shaker into it
- Stylishly garnish with half a slice of lemon or lime and a piece of your favourite red fruit (strawberry, cherry, or raspberry)
- Enjoy the tropical notes of Passion Fruit as you begin your journey into inebriation

Fresh vs Processed
For this recipe, I have used only pure, unadulterated fresh fruit in all its passionate glory. However, I am aware that bottled versions of pulp and syrups also exist on the market. These will likely have removed the seeds from the equation, and mixers will need to adjust their ratios accordingly.
Choosing the Best Rum for a Passion Fruit Daiquiri
In the name of ‘science’ I experimented with several rums when coming up with this recipe. In the end, I decided that the best bottle of booze for the passion fruit daiquiri was one that didn’t overpower the delicate flavour of the star ingredient. As a result, a plain and uncomplicated white rum like Bacardi Superior provides a solid base without trying to steal the show.

Want to Make Things a Little More Interesting
Throughout my endevour to create the perfect Passion Fruit Daiquiri, I tested a frightening number of flavour combinations in search of my goal. Most of these revolved around the kind of rum and citrus used to bring out the best in this exotic fruit without drawing attention away from its flavour. One rather moreish alteration that I will use again for my own personal enjoyment, however, was the addition of about 3 grams of freshly cut slices of ginger that I tossed into the cocktail shaker. This then resulted in an ever so slight fiery kick that complemented the passion fruit quite nicely.
