If you have ever had the urge to coat any kind of foodstuff with the chocolatiest covering imaginable, then you have come to the right place! So, saddle up and venture forth to find a wildly exuberant dark chocolate ganache that doesn’t detract from the pure hedonistic joy of it’s core cocoa component. Use it on cake, biscuits, cookies, pies, general fruit themed recipes, or slather it on your favourite loved one to add an extra kick of chocolatey goodness!

Wildly Exuberant Dark Chocolate Ganache

Ingredients
- 200g (7oz) 70% Cocoa Dark Chocolate
- 200g (7oz) Fresh Cream
- 40g (1½oz) Caster Sugar
- 15g (½oz) Butter
Instructions
- In a small saucepan add the cream, sugar and butter. Then place on a low heat, mixing continually
- As soon as the mixture starts bubbling, add the chocolate, stir, and remove from the heat
- Continue stirring until all the chocolate has melted, then blend for 2-3 minutes with a hand mixer
- Coat whatever foodstuff you feel requires chocolate

Add Some Extra Spark the the Wildly Exuberant Dark Chocolate Ganache
Mastered the art of bakery? Then it’s time to add a little spark to that dark chocolate ganache! try dropping in some chopped hazelnuts or almonds for an added nutty flavour, or go mad with some crystalized ginger for an extra little punch. The other option is to have a play around with different flavoured chocolates, of which there are now many. I have a particular fondness for Lindt’s ‘Orange Intense’ dark orange chocolate with almonds, but go experiment with whatever takes your fancy.
Another interesting way to enhance that ganache is to use it as cake glue for sticking a range of exciting things to your spongy creation. Strawberries work particularly well, as do other fruit things, whole and chopped nuts, more cake, and even individual sweets (candy) and chocolates. If you’ve come this far, there’s no point being healthy now is there!

For the hobbist baker, there’s nothing wrong with reaching for a good quality bar of chocolate from your local cocoa vendor and whipping up a batch of tasty ganache. If, however, you have ambitious goals within the realm of hedonistic desserts, then you should consider investing in a spot of Couverture Chocolate. This stuff contains more cocoa butter than your average bar of the black stuff and therefore packs a bolder and richer flavour punch that will turn even the meanest taste buds onto your side.
